It has been too long since I have created a meal plan and I feel the need for one this week. I used to be so excited and prepared for what we were going to eat for the week ahead. However, for the past couple months, I’ve found myself wondering around the kitchen at supper time wondering what to make, only to decide to go out for take out as I didn’t have anything defrosted. It’s time to give this meal planning thing another go. So here is this week’s menu plan.
Monday – Cheat Night
Tuesday – Grilled Chicken Caesar Salads
Wednesday – Lemon Pepper Salmon served over orzo pasta.
Thursday – Lettuce Wraps with cashews
Friday – Evening shift at work, so salad or something.
Saturday – Burgundy Pork Tenderloin
Sunday – Chicken (for me) & Beef (for him) fajitas
