Coconut Truffles

For obvious reasons, I haven’t had a lot of time to do any Christmas baking this year. Now let me clarify, I am on maternity leave and so I am home all day. However, I am holding Ezri for most of the day. We are either feeding or cuddling or sleeping. It’s hard to put her down because she gets upset. Yes I try, but I also want to enjoy every second I have with this precious little girl. Therefore that makes it hard to get a lot done during the day. I’m lucky if I even get to have a shower.

However yesterday I strapped Ezri into the moby wrap and I wore her while I tried to get a few things done. We have our final baby class on Tuesday and we’re having a little party. I really wanted to bring something sweet and my Mom had just given me this recipe. These truffles are delicious plus they are no bake and gluten free. I wanted to share the recipe with you all as well.

Coconut Truffles
Coconut Truffles

  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla
  • 3 cups unsweetened coconut (shredded)

Coconut Truffles
Mix the coconut oil, honey, cocoa powder and vanilla in a medium sized mixing bowl. Stir with a wooden spoon until mixed thoroughly. Add 2 cups of coconut, and mix till the coconut is evenly distributed throughout the chocolate.

Coconut Truffles
Use a small scoop and form into balls. I ended up just rolling and forming them in my hands. Messy, but effective. Roll the balls in the extra 1 cup of shredded coconut.

Place a square of wax paper on a plate. Put the balls on the wax paper. Put the plate of truffles in the freezer for about 20 minutes.

Enjoy these easy, but delicious treat!

    Thanks for sharing! they look so good. I think I even have all the ingredients! I might just have to give them a try.

    And I don’t blame you for not wanting to put Ezri down. I think I would be the same. I have been thinking a lot about having a little one, just have to get Cory on board 🙂

    Yum, those look good! That’s nice that they’re easy and no bake. My husband would probably love these because he likes coconut 🙂
