Szechuan Green Beans
I did not "invent" this recipe, nor do I claim ownership of it. I am merely trying to spread some delicious recipe goodness! Enjoy.

Ingredients:

  1. Wash the greenbeans, drain thoroughly, and trim the tops and bottoms.
  2. Cut the greenbeans on the diagonal into slices approximately 2 inches long.
  3. Chop white part of the onions and mix with the garlic and ginger.
  4. Heat 1 tbsp oil over medium heat. Add the greenbeans and stir-fry until they start to shrivel or "pucker" and turn brown (5 - 7 minutes).
  5. Remove the greenbeans and drain in a colander or on paper towels.
  6. Heat 1 tbsp oil in the wok on high heat. Add the garlic, ginger and onions. Stir-fry for a few seconds, then add the chili peppers and stir-fry for a few more seconds until aromatic.
  7. Add the greenbeans and the remaining ingredients.
  8. Mix together and serve.
