Szechuan Green Beans
I did not "invent" this recipe, nor do I claim ownership of it. I am merely trying to spread some delicious recipe goodness! Enjoy.

Ingredients:
- 1 pound Greenbeans
- 1 tablespoon garlic (chopped)
- 1 tbsp ginger (chopped)
- 2 green onions (white parts only)
- 1/2 tsp dry chili peppers
- 1 tbsp soy sauce
- 1/2 tsp sugar
- 1/4 tsp salt (more to taste)
- Pepper to taste (optional)
- 2 tbsp vegetable or peanut oil for stir-frying
Directions:
- Wash the greenbeans, drain thoroughly, and trim the tops and bottoms.
- Cut the greenbeans on the diagonal into slices approximately 2 inches long.
- Chop white part of the onions and mix with the garlic and ginger.
- Heat 1 tbsp oil over medium heat. Add the greenbeans and stir-fry until they start to shrivel or "pucker" and turn brown (5 - 7 minutes).
- Remove the greenbeans and drain in a colander or on paper towels.
- Heat 1 tbsp oil in the wok on high heat. Add the garlic, ginger and onions. Stir-fry for a few seconds, then add the chili peppers and stir-fry for a few more seconds until aromatic.
- Add the greenbeans and the remaining ingredients.
- Mix together and serve.
